Inspired by the slowly simmered, heavily seasoned cuisines indigenous to North Africa, the Tagine is designed for slow cooking meat and vegetables with small amounts of liquid. Its distinctive Stoneware lid allows for the constant return of condensation (steam condenses into water droplets when it touches the cool Stoneware lid) to the base, keeping ingredients moist and tenderizing tough fibers within the meat. And because it is crafted from durable cast iron, the Tagine retains heat longer and cooks food evenly and thoroughly.
Traditional Moroccan tagines (the dish is named for the cookware) typically include a combination of braised meat and fragrant spices like cinnamon, saffron and ginger. It works beautifully for traditional Chinese and Asian dishes as well.
